The Mikuni Pepperfin Tuna recipe is a crowd favorite at every sushi restaurant. This recipe is extremely easy to prepare and you can make it at home without spending a lot of money. It is so simple to cook that most of the ingredients needed can probably be found in your kitchen. You just need to purchase the sushi-grade tuna and a few other simple ingredients, and you will be set.
What is Pepperfin tuna?
Pepperfin is a cooking term that means thinly sliced sushi-grade fish. This adds a nice texture to the sushi making it even more enjoyable. Also, the spices and other flavors get spread evenly if the slice is thin.
How to Prepare Pepperfin tuna?
Freezing the tuna for about 30 minutes before cutting it hardens the fish making slicing much easier. This will result in thin slices that will melt in your mouth.

- Fresh Sushi Grade Tuna – 1/4 or 1/2 Pound
- Green Onions – 1 Tablespoon (Diced)
- Jalapeño – 1 (Thinly Sliced)
- Sesame Oil – 1 Tablespoon
- Sauce – Anything you like
- Sesame Seeds
- Lemons – 1-2 Pieces (If you want to make your own sauce)
- Oranges – 1/2 – 1 Piece (If you want to make your own sauce)

STEP BY STEP GUIDE
- Slice the tuna into 1/4 or 1/2 inch slices and arrange them on a plate. To make the sauce cover each piece, arrange them so that they fan out and overlap each piece.
- If you want to make your own sauce, mix the lemon juice, orange juice, sauce, sesame oil, and Jalapeños together and mix them to make your own tasty sauce. You can keep the Jalapeño seeds in or remove them. This is totally optional if you want to make your own sauce.
- After that, drizzle the sauce over the fish and try to cover the whole piece. Then, allow the fish to set for a minute or two. If the tuna starts to change color then don’t worry. But, it is recommended to eat this as quickly as possible. Serve it with the diced green onions. That’s it!
